No Bake Double Layer Pumpkin Pie

 

4 ounce softened cream cheese
1 Tablespoon sugar
8 ounce carton of thawed Cool whip
9” graham cracker crust
1 cup cold milk & 1 Tablespoon milk
2 pkgs 3.4 ounce instant vanilla pudding mix
15 ounce can pumpkin
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon cloves

In a small mixing bowl, combine the cream cheese, sugar and 1 Tablespoon of milk.  Fold in 1 ½ cups of whipped topping.  Spoon into crust.  In another bowl whisk cold milk and pudding mixes for 2 minutes.  Let stand 2-3 minutes till soft set.  Stir in pumpkin and spices.  Spread over cream cheese layer.  Top with remaining whipped topping.  Chill 3 hours. 6-8 servings.
